Holiday Recipe: Spinach Balls

It is already December and Christmas will be here before you know it.  Time to get your menu ready.  Holidays back home aren't complete without my Nana's spinach balls.   

She always calls them "Popeye Pills."  You can find this recipe and more in the Capital Cooking Cookbook.

2 10 oz boxes of frozen chopped spinach
¾ C melted butter
4 eggs
½ onion finely chopped
3/4 C Parmesan Cheese
2 C Pepperidge Farm Herbed Stuffing
½ T thyme
½ T Garlic powder

Preheat oven to 300 degrees. Squeeze out all water from spinach. Mix all ingredients together and roll into 1 inch balls and place onto baking sheet. Bake for 30 minutes and sprinkle with Parmesan cheese when they are out of the oven. Serve warm.
