Derby Recipes: Chicken Salad Tea Sandwiches

Tea sandwiches provide your guest something easier to manage when dressed in nice clothing.  You can try these sandwiches for a Derby party or even make them for Mother's day.  You might want to make a variety of different sandwiches for your guests to enjoy including the Cucumber Tea Sandwiches.

3 pounds boneless, skinless chicken breasts (cooked)
2 cups grapes-split
1 cup sliced almonds
2 teaspoons black pepper
1 teaspoon salt
½ cup chopped celery
1 cup mayonnaise
16 small slices thin white bread, ends trimmed

Shred chicken into bite size pieces. Combine with the rest of ingredients and toss to mix in a large bowl.  Spread the chicken salad onto 8 slices of bread and top with the other slice.  Make 2 diagonal cuts across sandwich to make 4 triangle tea sandwiches.  Serve immediately or keep chilled in an airtight container until ready to serve.
