Thinking of Drinking: Easter Cocktails

Rabbit Snack
Make these Rabbit Snacks on Easter.  These cocktails are perfect for any spring party.

Makes 2

Sugar (for rimming)
1 Orange
Ruffino Prosecco

Slice the orange into wedges and rub around the edges of your Champagne flute.  Rub the flute into sugar.  Squeeze the juice of a lemon wedge into each glass.  Put a shot of Ventura Orangecello into each glass.  Fill with Champagne and enjoy.

Carrot Cake-Tail
1 part Voli Voli Orange Vanilla Vodka
1 part carrot cake simple syrup (recipe below)
1/2 part cream
Garnish:  crumbled pecans, whipped cream cheese icing (recipe below) and dash of cinnamon

Pour the first 3 ingredients into a shaker full of ice.  Strain into shot glasses.  Top with garnishes.  One, two, three, shoot.  Yum!

Carrot Cake Simple Syrup

2 cups sugar
2 cups water
1/2 cup pureed carrot
1 cinnamon stick
Dash ground ginger
Dash nutmeg
1 teaspoon whole cloves
Combine water and sugar in a small saucepan and bring to a simmer over medium heat.  Stir until sugar dissolves and then remove from heat.  Add other ingredients and cool.  Store in a clear glass bottle or jar with a tight fitting lid in the refrigerator.  Stir and strain before serving.

Whipped Cream Cheese Icing

8 ounces cream cheese (room temperature)
1 cup sugar
Dash salt
1 teaspoon vanilla
1 1/2 cups heavy whipping cream

Whip cream until stiff peaks form and set aside.  In a large bowl, beat cream cheese, sugar, salt and vanilla together until smooth.  Fold in whipped cream.

Cucumber Mojito from Vapiano

Ingredients:
1 1/2 ounces Beefeater Gin
1/2 ounce Roses Lime Juice
1/2 ounce simple syrup*
1 ounce cucumber julienne*
8 mint leaves
2 ounces soda water

Instructions:
1.  Fill shaker tin 3/4 full of ice
2.  Add all ingredients to tin expect soda water
3.  Shake vigorously 10-15 times
4.  Pour directly into pint glass
5.  Top with soda water.

To make simple syrup:
1.  Measure 1 cup boiling water in measuring cup
2.  Add 1 cup white sugar
3.  Stir until all sugar is dissolved

To make cucumber julienne:
1.  Wash cucumber and cut into 2 inch pieces
2.  Standing each slice on end and slice into 5 mm slices
3.  Lay slices on their side and cut into sticks, 5 mm wide so finished julienne is 5 mm by 5 mm

Killer Kumquat from Alba Osteria

Ingredients:
2 oz Prairie Gin
.5 oz Barenjager Honey
.5 oz Simple Syrup
.5 oz Lemon Juice
.5 oz Lime Juice
1 oz Gin Infused Kumquat Marmalade
1 tablespoon of Kumquat Marmalade
Sugar to rim martini glass


Mix and enjoy.
