2 Cups Milk
1 cup minus 2 Tablespoons Semolina Flour
2 egg yolks
1 cup grated Parmesan
Dash of nutmeg
1 tablespoon butter
Bring milk to a boil in a heavy pot. Gently pour the semolina flour and stir constantly so as not to produce lumps. Stir until it is a smooth consistency and remove from heat. Add the 2 egg yolks and stir vigorously. Add cheese and continue stirring. Add nutmeg and butter. Stir until smooth.
Place warm mixture onto a plastic wrap and roll into a log form. Cool for a few minutes before cutting into disks. Place disks into a buttered baking dish and dot with butter. Place under broiler for 5-10 minutes until golden brown. Serve with Involtini.
