The Mediterranean is the deep, blue heart that gives life to the countries that surround her. This week, along with recognized executive chef John Manolatos, Lauren DeSantis creates mouthwatering Mediterranean dishes: white sangria, taramasalata, tzatziki, grilled flatbread and grilled seafood.
Taramasalata and Tzatziki are staples in Greek cuisine. DeSantis and Manolatos demonstrate the simplicity of creating these two tantalizing dips that are perfect to serve with their grilled flatbread creations.
Next DeSantis and Manolatos cook up a wide array of Mediterranean Sea food: Bronzino (Mediterranean Sea bass), baby octopus, cuttlefish, sardines, and blue prawns. Manolatos teaches the viewers how to clean the fish, to check the freshness, and to keep the skin on the fish to maximize flavor.
Enjoying the end result, the viewer is reminded of the way Mediterranean people have been known to enjoy life; and enjoying the Mediterranean food is a very important aspect of the Mediterranean way of life.
Manolatos is the head executive chef at Cashion’s Eat Place in Adams Morgan. In July of 2007, Manolatos partnered with his brother George, a longtime bartender, and General Manager Justin Abad to form the restaurant’s new ownership team. The three are very passionate about honoring the Cashion’s tradition. Manolatos has continued to cook in the same manner that he has for the past 13 years—using classic yet creative techniques to showcase the best products he can obtain
