My friend Chef Kazuhiro Okochi is opening Oh Fish!, a new sushi concept located on 19th Street, NW – between L & M Streets. From his early days at Sushi-Ko, to establishing the supermarket sushi for Whole Foods and then opening his now 12 year old signature restaurant, KAZ Sushi Bistro, for over 20 years Chef Kaz has been wowing the DC Sushi dining scene with his trend setting techniques and presentation. Now diners can experience his newest venture – ordering their own Maki rolls designed just the way they want - in his new takeout location.
The Oh Fish! inspiration stems from Chef Kaz’s early years working in Osaka in a restaurant famous for its futomaki (big roll). Futomaki has a number of ingredients, which can include eel, egg, mushroom, cucumber and jellyfish. The ingredients make futomaki a satisfying healthy meal in itself. Add a cup of miso soup or a fresh salad and you are set for the day.
After visiting a Subway shop here in the US, Chef Kaz came up with the idea for an assembly–line made Maki roll tailored to each customer’s request, similar to that of the futomaki from his days in Osaka. Subway is quite a departure from his KAZ Sushi Bistro roots, but he thought, “Why not be able to order a roll just the way I want?” And that’s how Oh Fish! began. Oh Fish! ordering is a six step process beginning by picking a roll size, then a protein, adding the fillings, then flavors, sauces and toppings. Roll sizes are 7 ounces of rice for a “Regular” or a “Skinny” at 4 ounces. The protein is a selection from nine seafood choices ranging from spicy tuna to eel or one can go with a totally vegetarian option. There are up to twenty choices for fillings and the sauce and topping selections include items such as citrus soy, spicy tomato, Japanese seven chili powder, or crunchy rice cracker. Once you make the selections you have a Maki just the way you want or you can always choose from one of the seven pre-designed signature rolls. Side orders of miso soup, seaweed salad and edamame are available and breakfast items will be available soon from 7:00 a.m. – 10:30 a.m.
