Executive Chef Kevin Longmire of Shab Row Bistro and Wine Bar in historic Frederick, MD shared this recipe with us for a perfect side dish to your main meal. Forget the canned cranberry sauce!
Serves 6ppl
INGREDIENTS:
1 pound fresh cranberries
1 each red onion, minced
1 each red apple, minced
4 ounces fresh basil
¼ cup orange juice
¼ cup olive oil
6 each thai red peppers
1/8 cup cracked black peppercorns
2 ounces sugar
3 ounces maldon sea salt
METHOD:
In a large pot mix the cranberries, onion, apple, peppers, orange juice, sugar, and pepper
Cook until tender
Cool overnight
Add the basil leaves, olive oil, and maldon
Mix well
