For the 3rd Annual Capital Cooking Team Dinner, Spilled Milk Catering generously provided our crew with a taste of their new menu.
We met Spilled Milk 3 years ago and it has been so fun to watch them grow. What started as a side project has now turned into a full time business with full bookings through November. Spilled Milk not only prepares excellent food, but the guys are a ton of fun! They are happy to cater everything from private intimate dinners to large corporate buffets, from office breakfasts and lunches to weddings. The catering company is doing so well that they are hiring a new chef so that Amit can devote his full attention to the management.

For this year's party, we took it up a notch by enlisting the cocktail expertise of Rhum Clement Brand Liason, Nikolai Konick. Nikolai walked us through the history of the rhum and gave us a full cocktail demonstration. He came up with some creative cocktail pairings for our tasting menu.
We enjoyed some Cypress Grove Goat Cheese with Rain Coast Crisps. The cheese and crackers were divine.
We started with Mini Cuban Sandwiches served with Creamy Tomato Soup Shooters. This was my favorite! The creamy soup is perfect for dipping the melt-in-your-mouth mini Cuban.
Pairing: Ti Punch (Premiere Canne, Siroppe de Canne, fresh limes)
Next up: Seared Bison Carpaccio served on Toast Points with Braised Peppers, Garlic and Herb Cheese, and Star Anise Pickled Red Onions. (Kristen's Fav)

Fun Veggie Option: Roasted Beets, Honey, Dijon, Red Onions, Gorgonzola, and Candied Walnuts served on Wonton Crisps held in Chopsticks
The Mini Lobster Rolls with a Tarragon Cream are served in little pop overs. You can't go wrong with lobster.
Pairing: Le Bakoua (VSOP, Sirop de Canne, fresh lime juice, orange bitters, sparkling wine)
The Results: Spilled Milk wowed us again. This menu was even better than the last. The Rhum Clement cocktail pairings took the experience over the top. The Capital Cooking Crew was completely impressed!
