For today’s
foodie generation, sauerkraut can be a mystery ingredient. That’s why a group of trendsetting
Washington D.C. chefs have joined
together for Kraut Rocks. Led by
celebrity chef Spike Mendelsohn, the chefs are sharing sauerkraut recipes and usage
tips with food fans. The headlining
element: each chef has created a
signature sauerkraut dish that he’s featuring on his restaurant menu throughout
September.
When assembling
his Kraut Rocks band, Mendelsohn recruited DC-area chefs whose cuisine, methodology
and neighborhood locations were significantly different so foodies could be
turned on to diverse approaches to rocking sauerkraut. Kraut Rocks chefs are:

Before Kraut
Rocks kicked off Mendelsohn called the chefs together to prepare and share at
the Kraut Rocks test kitchen. The day
included each chef presenting his signature sauerkraut dish to his Kraut Rocks
colleagues for review and critique. All
this tasting and toasting was caught on tape; this video shows the combined
