A Mexican Truffle Celebration

Rosa Mexicano launched a Mexican Truffle Celebration that will run through October 6th.  
You can't stop by Rosa Mexicano without ordering their guacamole.  
Also known as the "corn mushroom," huitlacoche has been a long-savored ingredient in Mexican cuisine. Originating from a plant fungus that grows on corn, the ingredient is a delicacy in Mexico, known for its mushroom-like flavor: sweet, savory, woody and earthy, typically used as a filling in quesadillas and in soups.  So climb out of your shell and try something a little different.
Sopa de Huitlacoche: roasted poblanos, jalapeño mint dumplings, crispy tortillas
Crepas de Huitlacoche: yellow habanero-mascarpone sauce and gratineed manchego cheese (my fav)
Huitlacoche Tortilla Pie: baked soft corn tortillas layered with sautéed huitlacoche, chile rajas and ancho chile-roasted corn cream (the ultimate comfort dish)
Grilled Diver Scallops Brochette: poblanos, red peppers and huitlacoche sauce
Huitlacoche with Ice Cream: raspberry and coconut sauce (strange, but tasty)
