2 sweet potatoes (about 1 pound total), peeled and cubed
Olive oil
Salt
1/2 teaspoon fresh ginger, grated
Pinch ground cumin
1 teaspoon paprika
Salt, to taste
2 tablespoons fresh lemon juice
3 tablespoons extra virgin olive oil
2 tablespoons chopped cilantro
1 tablespoon chopped parsley
3 heaping tablespoons of Hell of a Relish
Preheat oven to 375 degrees. Peel and cube the sweet potatoes and toss with olive oil and salt and spread evenly in a 13x9 baking dish. Roast until tender, about 20 minutes, then remove from oven and cool to room temperature.
Meanwhile, whisk together the ginger, cumin, paprika, salt, lemon juice and olive oil. Spoon marinade over potatoes and toss gently with tongs to coat. Right before serving add the fresh cilantro and parsley and Hell of a Relish. Serve at room temperature.
