It is picnic season. The Cherry Blossoms have bloomed and the Spring weather is here. Take advantage of it and go to the Mall for a picnic or find your favorite park. This chicken salad sandwich ring is perfect to take along. Make sure to do it on a day when there are no April showers. I also love to make this sandwich ring to take out to the Virginia wineries.
Chicken Salad Sandwich Ring: Picnic Pleasers
3 LB boneless, skinless chicken breasts cooked
2 cups green grapes-split
1 cup sliced almonds
1-1/2 teaspoons black pepper
1-teaspoon salt
½ cup chopped celery
1 cup mayonnaise
2 Pillsbury French Bread rolls
Italian Herbs
Olive oil
Take French Bread rolls and attach as a ring. Sprinkle Italian Seasoning and olive oil over the top. Bake according to package. Cool and slice through the middle. Shred chicken into bite size pieces. Combine with the rest of ingredients and toss to mix. Spread the chicken salad into the ring and pack it up for the picnic. You can slice the ring into individual sandwiches.
