New Crimson Whiskey Bar in Chinatown by Hilton Brothers

A new basement whiskey bar has opened in the heart of downtown Chinatown. The moonshine den is just one of three dining lounges created by brothers Eric and Ian Hilton, all located in the modern new Pod Hotel.



The Crimson Whiskey Bar, The Crimson Diner and Coffee Bar, and the Crimson View all serve southern-style food & drink. The brother's new downstairs spot is spacious and dimly lit, with a large bar area, numerous booths, and sectioned off seating areas. Garnished with Christmas lights and deer heads, the homey, study-like setting is the perfect spot to hang out, drink, chat, and glance at whatever sport team is playing on TV. The bar offers a large list of dark-liquors and artisanal moonshines, but also has delicious wines and ciders available.

Bourbon, Sugar, Bitters

Space Cake
Amaretto, Moonshine, Lemon, Sugar

Dog Walker

c&r white rum, lime, grapefruit, maraschino 


The Hilton empire has drastically affected the D.C. restaurant and nightlife scene. A few of their creations include: The Brixton, a British pub, The American Ice Company, a BBQ and beer joint, Chez Billy, a closed French bar which is now Ten Tigers Parlour, serving light Asian fare, Marvin, a Belgium and American South fare lounge inspired by Marvin Gaye, Satellite Room, a late night hot spot with cheap eats, El Ray, a taqueria and Mexican beer garden, The Gibson, a hidden speakeasy on U St., and Eighteenth Street Lounge, a Dj venue, bar, and dance club. If that wasn't enough, you may have heard the name Eric Hilton because of his genre-bending musical talents in Thievery Corporation. Quite a sibling duo, huh? 


Although designed as a drinking space, the new Crimson Whiskey Bar also offers delicious southern bites, including Fried and Raw Oysters, Pickled Devilled Eggs, Crispy Okra with Potatoes, and Pretzel Bun Burgers. However, my favorite southern comfort dish they served would have to be their Jalapeno Hush Puppies! 


The Crimson Whiskey Bar is open Sunday through Thursday from 5pm-2am and Friday and Saturday from 5pm-3am. The trendy basement bar can also be used as a cool event space for large events and celebrations.
