Mangoes are ripe and delicious now. My two little girlies love them. This recipe can add a refreshing element to many summer dishes. I also like to eat it plain or serve it with chips. Bring it along for a Memorial Day BBQ. Happy Thursday!
· 1 cup diced mangoes
· ¼ cup finely diced red onions
· 2 tablespoons chopped fresh cilantro
· 1 teaspoon lime juice
Stir and enjoy!
