Thinking of Drinking: White Wine Paloma

After months full of rosé and endless Aperol spritzes, we deserve to sip something that not only keeps the season alive, but does so with a twist. To upgrade your end of summer cocktail routine, Cooper & Thief Cellarmasters teamed up with experimental mixologist Elliott Clark (@apartment_bartender) to reinterpret a warm-weather favorite featuring 2016 Cooper & Thief Sauvignon Blanc (SRP: $29.99) – the Cooper & Thief White Wine Paloma.

INGREDIENTS:
2 oz Cooper & Thief Sauvignon Blanc aged in Tequila barrels
1 oz Blanco Tequila
1 oz Fresh Grapefruit Juice
1/2 oz Fresh Lime Juice
1/4 oz agave nectar
Soda Water

METHOD:
In a cocktail shaker, combine all ingredients except for the soda water. Shake with ice to chill, and strain into a Collins Glass over ice. Top with soda water, and garnish with a slice of grapefruit and sprig of mint.
