Recipe: Grilled Vegetables

This recipe is great for a summer BBQ!

Ingredients:
summer squash, cut in 1-inch rounds
zucchini, cut in 1-inch rounds
medium-size onion(s), cut in slices
mushrooms, cut in half
Grape tomatoes
Salt
Pepper
1/2 Cup of Olive Oil

Place cut vegetables in a shallow bowl or freezer sized bag. Add salt, pepper and olive oil and refrigerate for 20 minutes. Cook vegetables in a grill pan over medium high heat for 6-9 minutes. Turn occasionally and cook until tender. Remove vegetables to a platter and enjoy. Also, try topping the vegetables with a feta vinaigrette (feta, red wine vinegar, olive oil, oregano, salt and pepper).
