Nordic Kick-off Provided Washingtonians A Taste of New Nordic Cuisine!

The House of Sweden was the perfect spot to kick-off this week's Nordic Food Days.  
The views from the rooftop overlook the water in Georgetown.  I was so excited for DC to finally get a taste of New Nordic Cuisine.

 It is not too late for you to get a taste at Vidalia, Masa 14, DC Coast, Marcel's or Birch and Barley.  Also, stop by the Nordic Pavilion at the RAMMY's this Sunday!



DENMARK (Chef Mads Refslund) gave us a great interview for the Nordic Days video.  It was his first time traveling to DC and he really enjoyed working with Chef Kyle Bailey from Birch and Barley.  He made:
Danish Oysters w/ apple vinegar and fur shoot (These oysters were unbelievably delicious!)

NORWAY (Chef Geir Skeie)
Diver - Scallops - Cauliflower – Hazelnuts – Lemon
Cod ”Bocuse d´Or” – Beet root – Browned Butter – Jerusalem Artichoke
Halibut – Tarragon - Summer Vegetables - Mussels

It was a pleasure to see our friend, Chef Siggi Hall, from Iceland.  We had such a great trip with him in March and finally got to interview him. I even got to see my friend, Baldvin.

SWEDEN (Chef Tommy Myllymäki)
Halibut Tartar with Oyster Yogurt, Sorrel and pickled Cucumber.

Tender Baked Cod with shrimp, egg and horseradish served in a sabayonne of brown
butter and lemon.

Sour cream sorbet with strawberry juice and lemon verbana.

FINLAND (Chef Petteri Luoto)

Yoghurt Mousse with Strawberry Gelee and Blueberry Compote Flavored with Rosemary
