First Taste: Mad Fox Brewing Company



Celebrating it's 2nd Birthday, Falls Church's Mad Fox Brewing Company recently invited us to a tasting of Chef Andrew Dixon's latest offerings.  CEO and Executive Brewer, Bill Madden, was also on hand to educate us about his latest brews.


Frame Grilled Virginia Oysters
Chesapeake Oysters Char-grilled with Garlic Butter and Parmesan Picot


Ahi Carpaccio
Tataki Tuna, Poke Vinaigrette, Orange-Ginger Mayo, Crispy Shiitake, Basil Emulsion


Mushroom Strudel
Mushroom Duxelle Stuffed Phyllo Medallions with Saison Syrup, Chèvre Cream, Portobello Chips
Is this dessert or a meal? It could definitely pass for both!


Saision - Farmhouse style ale with yeast driven earth and spice notes and citrus fruit character, with a semi-dry finish


Cannelloni: House Ricotta, Spinach, and Pecorino Filled Fresh Pasta Sheets Roasted Over Marinara and Bechamel Sauces with Arugula Greens.  This, along with the Mushroon Strudel, were my favorite tastes of the evening.



Beer Can Chicken: Kolsch Roasted Chicken with Potato Puree, Pea Succotash, Pan Jus.  You can't go  wrong with chicken and potatoes!

Abbaye Des Chutes - sweet, fruity flavors, with a little spice


Bitterballen:  Traditional Dutch Bar Snack of Beef Croquette and Curry Mayo, on the menu since Mad Fox first opened.


Sweet and Spicy Grilled Vegetable Pizza:  Beer-BBQ Sauced Pizza Topped with Grilled Pineapple, Marinated Zucchini, Red Onion, Jalapeño, Sliced Tomato, Basil, Grated Parmesan, Smoked Sea Salt.  A nice balance of sweet and spicy that tipped towards the sweet side of the scale whenever I bit in to the grilled pineapple

English Summer Ale:  An emerging beer style developing in the UK, made with English pale and German pilsner malts and then lightly hopped with American Citra hops, this style of beer is used to attract younger drinkers who are used to drinking lager, and makes for light, easy drinking.


Classic Fresh Ground 8 oz Burger Topped with Rogue Creamery's Smoky Blue Cheese, Bacon Jam and Caramelized Onion Mayo on a Fresh Baked Brioche Bun.  Though I would much prefer an actual slice of crispy bacon on my burger, I can see why so many people requested this item become a regular on the menu.
