Perfect Pair: Cranberry Apple Sauce

Cranberry Sauce can sometimes have a pungent flavor that makes it hard to eat.  I've added apples to the mix and I think it balances the flavor and makes it more enjoyable.  Happy Thanksgiving!

Pairing:  


Sofia Rose- Sofia Rose' is delicate but its bubbles help it stand up to the sweet/tart thrill of cranberries. Bonus: its pink hue looks lovely next to cranberry red

Recipe:


3 to 4 pounds of cored, roughly chopped apples

2 cups fresh cranberries

2 Tbsp lemon juice

1/2 teaspoon ground cinnamon

3/4 cup of brown sugar

1 cup water

1/2 teaspoon salt

Combine ingredients in a large saucepan and bring to a boil. Stir the mixture continuously and reduce heat. Simmer for 20 -30 minutes until apple is tender and mixture thickens.

Remove from heat. Mash the apples and cranberries.
