My mom came to visit me during Easter in DC and I made a delicious feast. Celebrate spring with Garlic and Herb Lamb Loin.

The Dish: Garlic and Herb Lamb Loin
The Recipe:
4 large garlic cloves, pressed
1 tablespoon fresh thyme leaves, lightly crushed
1 tablespoon fresh rosemary leaves, lightly crushed
2 teaspoons salt
2 tablespoons olive oil
6 1 1/4-inch-thick lamb loin chops
Season lamb on both sides with salt, then press the lamb into the herbs and garlic.
Heat the same pan over medium high heat and coat with olive oil. Arrange the lamb in the pan and cook for 3 to 4 minutes per side for medium-rare, or until done to your liking. Enjoy!
