Recipe: Whiskey Peri Peri Sorbet

WHISKEY PERI PERI SORBET

This recipe is brought to you by Rochelle Schaetzl of Nando's Peri Peri

Ingredients:

2cups (500g) white sugar

1.5L water

3tbs (45ml) lemon juice

½ cup (150ml) whiskey

1tbs ( 15ml) sweet Peri Peri, strained through a fine sieve

2 egg whites

Method:

  1. Boil water, sugar and lemon juice in a large pot for 5 minutes until sugar is dissolved
  2. Add lemon juice and sweet peri peri sauce
  3. Cool to room temperature
  4. Whisk egg whites to a soft peak and fold into syrup.
  5. Churn in an ice cream machine until set

Makes 1l sorbet
