2 cups arugula
1 orange, cut into individual slices with the zest and pith removed
2 oz Parmesan cheese, shaved
1/2 medium avocado, sliced
Salt and pepper to taste
Toss arugula with orange and avocado.
Dressing:
1 tablespoon Colman’s mustard
1/3 cup champagne vinegar
3/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon orange juice
1/4 cup olive oil
Mix together some orange juice, mustard, a splash of vinegar, a bit of olive oil, salt, and pepper. Pour on salad.
