Clyde's of Columbia Executive Chef Jason Mcintosh's favorite side is Green Bean and Mushroom Casserole. Make your own this Thanksgiving!
1 1/2# Green beans
1/2 # Sliced mushrooms
2 oz chopped shallots
2 oz chopped Spanish onions
1 qt heavy cream
1 bu fresh thyme
1 Tbl Kosher salt
1 tsp Black Pepper
1 tsp onion powder
2 oz butter
Crispy fried Onions and Parmesan for topping
Saute butter, shallots and onions for 2-3 minutes on a medium flame. Add mushrooms and cook for another 2-3 minutes. Add green beans, heavy cream and spices. Simmer until cream thickens about 7-8 minutes. Put into a baking dish and top with fried onions and Parmesan. Bake for 5 minutes in a 350 degree oven.
