Warm up with this cider!
Poste Moderne Brasserie has been transformed into a cozy respite, as the restaurant relaunches the popular Poste Winter Lounge, complete with warm seasonal cocktails, complimentary s’mores and accompanying fire pits and blankets. Poste’s lead bartender Justin Hampton has crafted a menu of warming cocktails available exclusively on the patio Thursday through Saturday from 7 to 9 p.m. all winter long. Executive Chef Kyoo Eom has created complimentary make your own s’mores kits with favorite fixings including graham crackers, chocolate and marshmallows, available every day that the Winter Lounge is open.
Wassail (Hot Apple Cider) $12
1.5 oz Dalwhinnie 15year Single Malt Scotch
4.5 oz Hot Apple cider
Winter spices (clove, cinnamon, all spice, nutmeg)
Ginger
Orange peel
Pre heat apple cider with winter spices, ginger, and orange peels.
Strain off solids.
Store in hot pot for service.
In a footed glass mug combine spirit and apple cider
Garnish with cinnamon stick and half orange moon.
Wassail originates from at least medieval times in southern England. Folks would go-a-wassailing “singing“ and imbibe on hot mulled apple cider or other hot libations. To honor this traditional beverage and my own personal heritage I am using a light, honeyed, single malt scotch to complement the slight acidity and sweetness of the cider.
