It is already December and Christmas will be here before you know it. Time to get your menu ready. Holidays back home aren't complete without my Nana's spinach balls.

2 10 oz boxes of frozen chopped spinach, thawed
¾ C melted butter
4 eggs
½ onion finely chopped
3/4 C Parmesan Cheese
2 C Herbed Stuffing
½ T thyme
½ T Garlic powder
Preheat oven to 300 degrees. Squeeze out all water from spinach. Mix all ingredients together and roll into 1 inch balls and place onto baking sheet. Bake for 30 minutes and sprinkle with Parmesan cheese when they are out of the oven. Serve warm.
