1/4 cup butter
1/2 onion, finely chopped
1/4 flour
3 cups milk
2 cups chicken stock
1 teaspoon salt
Pinch nutmeg
2 cups shredded cheddar
2 broccoli stalks, roasted (20 minutes at 400 degrees)
Melt butter over medium heat in a large pot and add onion. Saute until softened. Sprinkle with flour and stir for 2 minutes.
Whisk in milk, stock, salt and nutmeg. Reduce heat to a simmer. Whisk until smooth. Add cheese 1/2 cup at a time. Add broccoli and ladle into a bowl and garnish into a buttery crouton (Cube bread and toss it with melted butter and garlic salt. Bake on 400 degrees for about 10 minutes until crispy.)
