Time for a Lunch Break with Capital Cooking

It’s time to break for lunch as Lauren DeSantis, host of Capital Cooking, shows viewers how to make a fulfilling and satisfying meal that goes beyond the typical lunch fare. Special guest Anita Estell, a local D.C. lobbyist, assists Lauren in the kitchen and shares stories of life in the city on the latest episode of Capital Cooking.

Seasonal mixed greens with cranberries, apples, caramelized walnuts and a fig balsamic vinaigrette begins the menu. A fresh and healthy dish sets the perfect tone for any meal, especially the infamous power lunches D.C. is known for. Anita and Lauren jump right in to creating a pan-seared tilapia with lemon-vanilla beurre blanc sauce. Although a beurre blanc sauce sounds difficult to make, Lauren shows viewers just how simple it really is. Combined with lightly seared filet of tilapia, this dish promises to satisfy any guest.

To end the meal, Anita and Lauren create a delicious pumpkin crème brulee, a great seasonal dish to compliment the mixed greens. This dessert is not reserved only for upscale restaurants as Lauren demonstrates how easy it is to make this sweet dish without any extra tools. Simply create the pumpkin custard and place in the oven. In no time at all, guests will be enjoying a fantastic homemade treat.
