Thinking of Drinking: Peach Ginger Julep

This Peach Ginger Julep hits the spot for Derby time!

2 oz. Woodford Reserve 
1 oz. Peach Ginger Syrup 

In a Boston shaker combine bourbon, peach ginger syrup, and a handful of fresh mint. Double strain over crushed ice. Garnish with a fresh mint sprig. 

Peach Ginger Syrup 
1 cup water 
1 cup sugar 
1 inch fresh ginger, peeled and minced 
2 peaches, pitted and sliced 

For syrup, combine all ingredients in a sauce pan. Bring to a boil and stir until sugar dissolves. Reduce heat and simmer for five minutes. Remove from heat and let steep for an hour. Pour syrup into a glass jar through cheesecloth. Let cool.
