Banana Pudding for MawMaw

In 2017, my maternal grandmother passed away right before Christmas.  Her loss was devastating to my family.  This past December, my paternal grandmother had a heart attack and was told she has 30 days to live.  I'm not ready to lose her and neither is my family.  She's active, funny and so loving.  My daughters adore being with her.  We went to visit her last week and I asked her about her favorite foods and what I could make for her.  She asked for banana pudding.  I made the recipe below and she loved it.  Please keep her in your prayers.

3/4 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
3 cups milk
3 large eggs
1-1/2 teaspoons vanilla extract
8 ounces vanilla wafers (about 60 cookies), divided
2 large ripe bananas, cut into 1/4-inch slices
Whipped Cream

In a small bowl, whisk eggs and set aside.

In a large saucepan, mix sugar, flour and salt. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat.

Whisk a small amount of hot mixture into eggs; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Stir in vanilla. Cool 15 minutes, stirring occasionally.

In an bread pan, layer vanilla wafers, half of the banana slices and half of the pudding. Repeat layers.

Top with whipped cream.  Refrigerate 4 hours or overnight. Just before serving, remove wrap; crush remaining wafers and sprinkle over top.
