Amazing Dishes With Less Than 475 Calories: Seasons 52

Initial Thoughts:
  • Design and Decor:  Warm contemporary design with accents of wood and stone and colorful glass vases.
  • Food:  Every dish has less than 475 calories and I loved everything.
  • Drinks:  The award-winning wine list which is created and developed by Master Sommelier George Miliotes (the 152nd master sommelier in the world) offers a selection of 100 wines, including 60 offered by the glass.
  • Price: Very Reasonable
  • Would I go back?  Yes.

I got to check out Seasons 52 at a special press preview.  I was extremely impressed with the flavorful food with no more than 475 calories. Chef Benjamin Erjavec is the Executive Chef Partner of the North Bethesda Market (11414 Rockville Pike in North Bethesda, across from White Flint Mall) location.  Seasons 52 has an amazing wine selection.

Seasons 52 has the most creative presentation for the Earthbound Farm's Organic Arugula with truffle dressing portobello mushrooms and Parmesan cheese. They bring it to the table in a glass cylinder and remove it before serving. 
 I loved the Cedar Plank Roasted Salmon with whole-roasted sweet carrots, fresh asparagus and red bliss potatoes. (recipe below)  The woody aroma fills the air when the fish is brought to the table. 
The mango cheesecake and old-fashioned carrot cake mini-indulgences are fantastic. 

The Seasons 52 in North Bethesda seats 310 diners in its main dining area, al fresco and in the piano bar which features live entertainment nightly.  Additionally, the restaurant offers three private dining rooms and an exclusive chef’s table. The private event space is fantastic.  Every room is equipped with screens and projectors.  

Cedar Plank Roasted Salmon
NOTES:
·        Select premium salmon filets—preferably wild or organic
·        Cedar planks – available at gourmet grocery stores
·        Soak cedar planks overnight in water.
Ingredients for Marinade:
4 each fresh salmon filets (6-8 oz each, boneless, skinless)
2 tablespoons Dijon mustard
1 teaspoon malt vinegar
1 teaspoon soy sauce
1 lemon, zest and juice
1 tablespoon extra virgin olive oil (plus some for planks)
Combine ingredients above and lemon zest in a small glass dish.  Coat salmon filets with marinade and allow to marinate for one hour.  Use sea salt and fresh ground black pepper to taste
Procedure:
·        Pre-heat oven to 475°.
·        Remove cedar planks from soaking water.
·        Rub cedar planks with extra virgin olive oil.
·        Place salmon filets on cedar planks and season with sea salt and fresh ground pepper.
·        Roast salmon 8-10 minutes (depending on size of filets).
·        Serve with lemon and your favorite side dishes.
