During our time in Cabo, Mexico, we stopped by the One and Only Palmilla to cook with Chef Larbi Dahrouch. The resort is phenomenal and Chef Larbi is awesome. We had such a blast filming with him in the herb garden. I wish I was there now eating this guacamole!!
INGREDIENTS:
4 ripe avocados
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
A dash of Extra virgin olive oil (EVOO)
METHOD:
1. Cut avocados in half. Remove seed. Scoop out avocado from the peel, put in a mixing bowl
2. Using a fork or a whisk, mash the avocado. Add cilantro and lime juice
3. Add Salt and pepper to taste
4. Finish with a EVOO drizzle
