Recipe: Watermelon Gazpacho

What is light and refreshing and made with watermelon?  Blue Duck Tavern's Watermelon Gazpacho. Enjoy!


1 ea Watermelon, pureed

2 ea English Cucumbers

3 ea Tomatoes, medium-sized, diced

2 oz Champagne Vinegar

1 stalk Celery, diced

1 clove Garlic, chopped

½ Red Onion, medium-sized, diced

Salt, Pepper, Tabasco to taste


Combine all the ingredients. Allow to marinate overnight. Blend in food processor and pass through chinoise. Finish with the tabasco, salt and pepper.
