Recipe: Stroopwafel Pumpkin Bread



Happy Fall! Fall is my favorite time of the year. I love the colors, the smells, the outfits, the flavors! Everything during the fall feels so homey… but especially a delicious homemade loaf of bread. Since it is finally October, I decided to start baking my favorite treat again… pumpkin bread!

My friend’s mom has a delicious homemade recipe that I always use during the fall (aren’t moms the best??). However, this year I decided to bake up the classic pumpkin loaf with a twist by adding one of my other favorite snacks… STROOPWAFELS.

Mixing bits of crunchy and gooey Dutch caramel waffles into the pumpkin bread was an ingenious idea! I made it for girls’ night—and the loaf was completely gone before the wine and cheese board.

I definitely recommend trying out this recipe. It’s a crowd pleaser…and I know I will be making another loaf for my morning breakfasts!

STROOPWAFEL PUMPKIN BREAD

1 ½ Cup Flour
1 t. Cinnamon
½ t. Salt
½ t. Baking Soda
2 Eggs
1 Cup Sugar
¾ Cup Canned Pumpkin
½ Cup Oil
1 Cup Chopped Stroopwafels (and 1 Stroopwafel half for decoration)

1. In one bowl, combine flour, cinnamon, salt, and baking soda.
2. In another bowl, beat eggs, sugar, pumpkin, and oil.
3. Stir egg mixture into dry ingredients until just moistened.
4. Fold in Stroopwafels into batter.
5. Pour into greased loaf pan.
6. Bake at 350 for approximately 50 minutes.
7. Add a decorative Stroopwafel on top of loaf once it has cooled. 
7. ….and enjoy!
