Perfect Pair: Summer Cucumbers and Capture Sauvignon Blanc

Tuesdays are all about pairing food and wine. Sauvignon Blanc has herbaceous notes so pairs well with green herbs, like dill. The name Sauvignon Blanc means "wild white." I absolutely love it for summer.

The Dish:  Summer Cucumbers

The Recipe:

2 English cucumbers, thinly sliced
1 shallot, thinly sliced
1 cup seasoned rice vinegar (available at Asian markets.  I use Marukan orange label.)
1/3 cup water
2 tablespoons fresh dill, minced

Toss cucumbers with shallot slices.  Pour vinegar and water over cucumbers and shallots. Stir in dill. Cover with plastic wrap and refrigerate 1 hour. Salt to taste.  Serve cold or at room temperature.  

The Tradition Sauvignon Blanc has flavors of bright citrus such as lime peel, white stonefruit (like peaches) and green apple fragrances. The Capture vineyards highlight the ideal characteristics for Sauvignon Blanc with mineral texture, brilliant acidity and a fresh finish.
