Tuesdays are all about pairing food and wine. Sauvignon Blanc has herbaceous notes so pairs well with green herbs, like dill. The name Sauvignon Blanc means "wild white." I absolutely love it for summer.
The Recipe:
2 English cucumbers, thinly sliced
Salt
1 shallot, thinly sliced
1 cup seasoned rice vinegar (available at Asian markets. I use Marukan orange label.)
1/3 cup water
2 tablespoons fresh dill, minced
Toss cucumbers with shallot slices. Pour vinegar and water over cucumbers and shallots. Stir in dill. Cover with plastic wrap and refrigerate 1 hour. Salt to taste. Serve cold or at room temperature.
