Recipe: Enchiladas with Seasonal Roots


My favorite home delivery box – Seasonal Roots – curated another great box for me to make some delicious Enchiladas! The veggie fairies brought me fresh meat from Ovoka Farm’s and a spicy sauce from Clark & Hopkins. 


Ovoka is a historical farm, surveyed by George Washington in 1769, and is located in the Blue Ridge Mountains of Virginia. Clark and Hopkins is a family business based in Richmond Virginia – and has multiple different homemade sauces that add to many dishes. The Oaxaca Hot Sauce contains a Smoky Mezcal, dried local peppers, habanero and a Mexican chocolate which creates a delicious Mexican mole flavor. 


Enchilada Recipe: 



1 Pound Fresh Ground Beef 
1 Diced Green Pepper 
1 Can of Drained And Rinsed Black Beans 
1 Onion Diced 
1 Pint Mushrooms Sliced 
½ Can Of Corn Or 2 Ears 
2 Tomatoes
2 Cans Enchilada Sauce 
Oaxaca Pepper Sauce – Clark and Hopkins 
Corn Or Flour Tortillas 
1 ½ Cup Shredded Cheese 





Instructions:

Sauté diced onions in a large pan then add sliced green pepper, corn, mushrooms, diced tomatoes and ground beef. 

Add 1 10 oz can of enchilada sauce, as much Oaxaca sauce as desired (It may be spicy!), and 1 cup shredded cheese. Mix together. 


Spoon enchilada mix into corn or flour tortillas. 


Place seam side down in lightly greased baking dish. 


Pour another can of enchilada sauce over top and sprinkle with shredded cheese. Bake at 375 degrees for 15 to 20 minutes.
