Graham Bartlett of Zengo is helping us get ready for Thanksgiving this month with his Piloncillo-Ginger Roasted Sweet Potatoes. Spice up your holiday with a twist on traditional sweet potato recipes.
5 peeled and chopped sweet potatoes
7oz piloncillo Mexican Sugar, or brown sugar mixed with molasses
1/2 c low sodium soy sauce
1 finger of ginger, peeled and chopped
4oz butter
Pinch each salt and pepper
Garnish with sesame seed and chopped scallion
Puree the ginger with the soy sauce in a blender, then heat with butter and piloncillo in a small pan over low heat until sugar is melted.
Toss with sweet potatoes in a bowl, and roast at 375 degrees on a greased cookie tray in the oven, stirring occasionally, until they are tender and glazed.
