Thinking of Drinking: Lavanda

So many wonderful spots are popping up in my neighborhood.  El Centro has probably the best tequila selection in town.  If you're not in the mood to sip it straight up, you'll love the Lavanda cocktail.  I'm thinking of drinking right about now.  How about you?
"Lavanda"
From El Centro

1.5 oz Blanco Tequila (El Jimador)
1.0 oz Lavender Simple Syrup*
1.0 oz Ste Germaine Elderflower
.75 oz fresh squeezed lime juice
(splash) Club Soda

Garnish: Fresh lavender sprig


Combine all of the above liquid ingredients, sans club soda, in an ice filled shaker. Shake until cold. Pour contents of shaker into Wine Glass.  Top with a splash of soda. Garnish with fresh Lavender.

*Lavender Simple Syrup

Bring 2.5 cups H2O to boil then turn down to low heat and add 6oz fresh lavender...let steep until water turns amber in color. Strain lavender from Tea.

Combine 2.0 cups Lavender Tea and 2.0 cups Sugar over med to high heat until sugar is completely dissolved and resulting syrup is translucent.  For more intensity add fresh lavender to simple while cooking, be sure to strain well.
