Swedish Recipe: Toast Skagen

We had a blast on our Swedish adventure to explore the cuisine and culture. We got our first taste of Toast Skagen in Stockholm, Sweden at Lisa Emqvist inside Östermalms Saluhall.  It wasn't until our trip to Grinda (one of the islands in the archipelago) that Chef Victor Rundquist showed us how to make it.  Imagine visiting a beautiful and relaxing island and cooking with the chef outside on the BBQ pit.  It couldn't be better.  The Toast Skagen is a traditional Swedish starter and we saw it listed on the menu at most restaurants. This is a great recipe for Spring!


2 cups peeled baby shrimp
Juice from 1/2 lemon
2 tablespoons minced dill
2 tablespoons minced red onion
1 cup mayonnaise
4 pieces white bread
Salt and White pepper
Bleak roe  (optional)

Chop the shrimp into small pieces.  In a mixing bowl, add shrimp, mayonnaise, red onion, dill, and lemon juice. Fold everything together carefully. Add salt and white pepper to taste.
On a grill or in a sauté pan over medium heat,  toast the bread slices.
Place the toasts on plates, spoon the shrimp mixture on the toasts.  Add bleak roe on top if you'd like.
