We had a blast on our Swedish adventure to explore the cuisine and culture. We got our first taste of Toast Skagen in Stockholm, Sweden at Lisa Emqvist inside Östermalms Saluhall. It wasn't until our trip to Grinda (one of the islands in the archipelago) that Chef Victor Rundquist showed us how to make it. Imagine visiting a beautiful and relaxing island and cooking with the chef outside on the BBQ pit. It couldn't be better. The Toast Skagen is a traditional Swedish starter and we saw it listed on the menu at most restaurants. This is a great recipe for Spring!

All Aboard: Swedish Crayfish Safari!
In the gorgeous little seaside villa of Fjallbacka, nestled
like a hand into the glove of the deep,
mysterious Bohuslan Coast in West Sweden, you may be surprised to learn that
you can go on a wild safari. But you
won’t need a rifle, and you won’t be tracking anything resembling the Big
Five. Instead you will be jumping on a
four-ton fishing boat and diving headlong into crashing waves to hunt crayfish submerged
nearly 300 feet below the sea’s surface, a place so cold and so dark that only
the tastiest of creatures hide out there.

Around the Globe: Wild Goose with Apple Vinegar Gravy
On our last day in Sweden, we stopped for a visit in
Malmo. We were greeted by the lovely Mia Klitte to experience A Slice of Swedish Hospitality.
We met Chef Andreas Larsson and
went shopping at the Green
Market to gather the ingredients needed to prepare dinner. Mia
graciously hosted us at her home to prepare the meal. Below you'll find

Around the Globe: Cod Carpaccio
During our time in Sweden, we stopped off for a visit to the water tower in Ystad to cook with Chef Olle Ahnberg. Chef Olle showed us how to make his Cod Carpaccio with shallots, olive oil, lemon and parmesan. This dish is simple and delicious. Enjoy!
