Recipe: Guacamole for Cinco de Mayo

It is almost time for Cinco de Mayo, so get ready by making some guacamole like we did on our Mexican Fiesta Episode.  This recipe is also featured in the Capital Cooking Cookbook.


1/2 teaspoon of Minced garlic
2 avocados (pitted and peeled)
1 small tomato diced
Salt to taste
Chopped Cilantro
Tortilla chips with a hint of lime

Combine jalapeño relish and garlic in a medium bowl. Mash in avocados with a whisk. Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready. Mix in diced tomatoes right before serving. The jalapeno relish gives it the perfect kick. Serve with tortilla chips with a hint of lime.
