Food Bloggers Challenge: Stefanie's Tex-Mex Chicken Pot Pie

Tex-Mex Chicken Pot Pie

Ingredients

  • Onions
  • Brown Rice
  • Chicken
  • Black Beans
  • Bell Pepper
  • Garlic
  • Serrano Chili
  • Parsley
  • Chipotle pepper in Adobo sauce
  • Jiffy Corn Cake mix
  • Egg
  • Milk
  • Olive Oil
  • Salt and Pepper
  • Crema Mexicana
  • Chicken Broth
  • Butter
Cook chicken in olive oil and salt and pepper. Remove from pot. Add in oil with diced onion, then peppers, then Serrano chili, then chipotle and adobo sauce. Let cook. Add rice then add broth, reduce. Add in crema Mexicana and stir to combine. Let reduce.
Mix corn cake batter of prepared mix, egg, milk and crema Mexicana. Pour on buttered pan, when cooked, flip. Cut out top portion and use scraps to fill the bottom of the bowl.
Add chicken to mixture, adjust with broth, cream, salt or pepper as necessary. Add in parsley. Pour mixture into bowl. Top with corn cake.
