Recipe: Cucumber, Tomato and Feta Salad

This salad is light, healthy and perfect for Memorial Day.

2 cucumbers, thinly sliced
1/2 small red onion, thinly sliced
2 cups of cherry tomatoes, halved
1/2 cup of feta cheese
2 tablespoons cilantro, chopped

Combine all ingredients together and toss with dressing.  Serve.  *Sometimes I top with avocado as well.


1/2 cup of olive oil
1/2 cup balsamic vinegar
1 tablespoon mustard
1 teaspoon of sea salt
1/2 teaspoon of black pepper

Whisk all of the ingredients together.
