Thinking of Drinking: Pumpkin Amaro Manhattan

Recover fromThanksgiving with some fun cocktails!  Here's a great pumpkin Manhattan cocktail recipe from BLT Steak. They make their own Amaro for the drink and barrel-age it, but you can use any Amaro from the store.  Cheers!

Pumpkin Amaro Manhattan 

2.5 oz Bulleit Bourbon 
.5 oz Amaro
.25 oz Pumpkin Syrup 

Shake and strain.

Syrup:
1 qt pumpkin juice (peel and juice through extraction juicer)
3 qt sugar
3 qt water
1 tsp allspice
2 cinnamon sticks 
1 nutmeg (whole)

Combine ingredients in pot (grind cinnamon and nutmeg) and reduce by half volume, strain through a chinoise.

Amaro: 
1 stalk rosemary
1/2 oz sage leaves
2 mint stalks
3 anise pods
10-15 whole cloves 
1/2 tsp quassia 
3 cups everclear (or high proof spirit)
1 1/2 cups sugar 
1 1/2 cups water 

Grind herbs and steep in Everclear for 3-4 weeks. Strain out and age in barrel for 5 days. combine sugar and water and heat until dissolved. When cooled add to infused alcohol.
