Planning a Birthday Party

A few years ago, my friend Katie and I were talking and we realized our husbands' birthdays were only two days apart. We decided, why not throw a joint birthday party?

I made a delicious family recipe of Ricotta Cake. We made two fabulous Cocktails for the birthday boys...

Corey's Cooler
2 cups of lemon juice
4 cups water
2 cup sugar
1 bag of frozen blackberries
2 cups ice
Lemon slices for garnish
Mint
2 cups of rum

In a saucepan boil 2 cups water with sugar, stirring, until sugar is dissolved. Add lemon juice, and remaining 2 cupswater and cool.

In a food processor or blender puree blackberries and stir into lemonade. Pour blackberry lemonade through a sieve into a pitcher or other container and add in rum, then chill.

Serve lemonade over ice in tall glass, garnished with lemon slices and sprigs of mint.

Jack Julep

1 bunch of mint
2 cups of simple syrup
1 750 ml bottle of bourbon

Infuse 1/2 of the mint with the bourbon in a large jar overnight. Fill a large pitcher with ice and pour in bourbon mixture and simple syrup. Serve in glasses with the remaining mint sprigs.

The cocktails were a hit!!  Then we made some tasty appetizers.... Baked Brie, Caprese Bites, Bruschetta, a veggie platter, and a cheese platter.

Sun-dried tomatoes

Pine Nuts

Slice baguette and toast under the broiler in the oven until lightly browned. Let cool and spread the Boursin cheese on top. Slice the sun dried tomatoes into small pieces and put two on each piece of baguette. Sprinkle a few pine nuts on top and enjoy!!

Caprese bites

Makes 30 to 35 bites
Mini fresh mozzarella balls marinated in olive oil, basil, pepper, and other spices.
30 to 35 toothpicks
1 container small grape tomatoes
Balsamic vinegar

Poke a toothpick through a grape tomato, then through a marinated mozzarella ball. Arrange on a large platter with the small bowl of the oil mixed with balsamic vinegar for dipping. If making ahead, cover and refrigerate up to two hours.
We decorated the condo with beautiful red sunflowers. It was a fun party!  This year we'll be in Iowa to celebrate.  Hope this helps with any summer birthday party planning!
