Recipe: Stir Fried Golden Shore Scallops

During my time in Taiwan, we visited Danshui, in New Taipei City (Taipei County).  Danshui Fisherman's Wharf is one of the popular scenic spots in Taipei.  

We stopped by Fullon Hotel to cook with the renowned chef, Cheng Yen-chi (AKA Chef Ah-Chi).  In addition to his day job, Chef Ah-Chi has in recent years taught culinary arts, hosted a cooking program on TV, and published a popular cookbook. 
Although he didn't speak English his happy personality shined through with his infectious smiles.  He showed us how to make Stir Fried Golden Shore Scallops.  Enjoy!

7 ounces of Golden Bamboo Shoots
4.5 ounces large scallops
5.5 ounces of green mussels
1/3 cup of chopped red and yellow peppers
1/2 cup broccoli
1 1/2 tablespoons of cream
Oil

Chop the vegetables.  Boil the bamboo shoots, scallops, mussels, peppers and broccoli for 2-3 minutes.  Fry the bamboo shoot in oil until golden. 
Stir fry the rest of the food and add the duck egg yolk and cream.  Serve.
