Appetizer: Chicken QuesadillasI love buying a rotisserie chicken and making these quesadillas. They are a perfect week night treat.
4 Flour tortillas
2 tablespoons Jalapeno Black Bean Bruschetta
1 t minced garlic
3/4 C shredded cheddar cheese
½ C shredded chicken
½ of an avocado (sliced)
Heat a skillet to medium, spray with cooking spray, and place one of the flour tortilla shells on the skillet. Sprinkle on half of the cheese, half of your garlic, half of your Jalapeno Black Bean Bruschetta, half of your chicken and half of your avocado. Put another tortilla on top.
After cheese has started to melt and tortilla has browned, flip and do the other side. Repeat with other quesadilla.Cut each quesadilla into 4 pieces and serve with sour cream.
