Thanksgiving Leftovers: The Clerk

Here's a fun recipe for "The Clerk" - a delish sandwich that Johnny Mo the Musical Chef - chef/owner of Mallards Restaurants, Catering, and Entertainment located on the Eastern Shore of VA - makes for friends, family, and guests at his restaurants using Thanksgiving leftovers!

THE CLERK
Serves 1-2 ppl

INGREDIENTS:

4 oz. sliced turkey breast
2 slices munster cheese
2 slices thick cut 7 grain bread
2 slices tomato
½ c. alfalfa sprouts
2 T. whole berry cranberry sauce
½ c. mayonnaise

METHOD:
In a small bowl mix the cranberry sauce and the mayo together until well incorporated. Next lay the bread on a cutting board, one slice on the left, and one on the right. Start with a spatula and apply a generous amount of mayo both slices of bread. Now we can start building the best sandwich you’ve ever eaten. Place one slice of the cheese on each slice of bread, then place the tomatoes on the left piece and the sprouts on top of the tomatoes. On the right side, go ahead and pile that fresh, moist turkey breast as high as you can. Now flip them together and throw a couple of picks in to hold that thang’ together. Slice her in half and don’t get too close to anyone else because they will probably try to steal it!!
