Greg McCarty of nopa Kitchen + Bar shared his Grilled Baby Corn, Chili Butter and Lime recipe for the 4th of July. Enjoy!
Recipe is per person
9 pieces of baby corn per person
2 tbsp butter
1 tsp fresh lime juice
1/2 tsp crushed chili flakes
1 tsp sliced green onions
Sea salt to taste
Cut a slit in each piece of baby corn and remove the corn from the husk. Reserve the husk.
Clean the silk from the corn and place the corn back into each husk.
Melt the butter in a small pot and add the chili flakes and lime juice.
Place the corn on the grill and let the outside of the husks char.
When the corn is done sprinkle with sea salt, and spoon the chili butter into each husk to coat the corn.
Garnish with the green onions.
